In reminiscing about the Thanksgiving holiday, I have come to the conclusion that I might just be the luckiest girl alive. See how this T-day fairytale plays out… Lucky fact # 1. As a transplanted Canadian, my side of the family celebrates Thanksgiving one month earlier, so no picking sides or doing the dinner table shuffle on a belly full of turkey required. Lucky fact # 2. Destiny leads me to find the perfect match hubby while living in geographically remote and distant cities – the stars must have been aligned for that fortuitous connection. Extended family are most awesome and completely normal. Hurray! We could stop here, but… Lucky fact # 3. Hubby and said extended family hail from Korea. Let the Korean Inspired Thanksgiving food extravaganza begin!
I must admit, the most unusual part of my inaugural Thanksgiving with my adoptive family was eating turkey with chopsticks. But those chopsticks unlocked a world of Asian infused deliciousness. And made with much love – all the aunts and cousins crowding in the kitchen to put the holiday meal together. To this day I fail miserably at cooking traditional Korean dishes – the flavor and spice blend escape me, no matter how many hours I spend on the phone getting turn by turn instructions. However, left to my own devices, my Korean Thanksgiving menu would look a little like this:
Maybe one day I will be able to return the favor and host my own interpretation of the Korean Thanksgiving Utopia. But until then, I will plan to eat and drink happily ever after on this special day.
